Making beer chili con carne
Chili con carne is a dish that has a great variety of preparation, although it is a recipe of Mexican origin that crossed borders and became popular in various parts of the world, it is a highly versioned dish, so you can find many different recipes, such as this one that we have prepared with beer. Chili con carne is characterized by being a tasty and spicy dish, but we can adapt it to our liking by moderating the amount of chilli. For the meat we can use beef, pork or a mixture of both. If we only use veal, it is good to add a little bacon to add some fat to the dish.
- 150 gr. red pepper
- 100 gr. green pepper
- 100 gr. of onion
- 2 cloves of garlic
- Cayenne chilli
- 5 gr. cumin powder
- 500 gr. pear tomatoes or similar
- 500 gr. meat broth
- 200 ml. of beer
- 300 gr. red beans
- 500 gr. minced beef
- 50 gr. bacon
- 1 lime
- Extra virgin olive oil
We start by preparing the ingredients. We chop the onion. Cut the peppers into small cubes and slice the garlic cloves. Peel and chop the tomatoes. We chop the chilli very fine. Cut the bacon into slices or cubes.
We pour extra virgin olive oil into a deep frying pan or non-stick casserole and cook the meat with a little salt, pepper and cumin. Sauté for a few minutes and when it is almost done, remove it from the heat, transfer it to a plate and reserve.
In the same pan we add a little more oil and sauté the onion, stirring from time to time so that it does not burn. When the onion begins to become transparent, add the garlic, chilli and peppers. Season with salt and pepper, stir and fry for 7-8 minutes.
Add the beer to the sauce, stir and let it reduce until almost no liquid remains, stirring every two minutes.
Add the chopped tomato, mix it well with the rest of the ingredients, cover the pot or casserole and let it cook for 35-40 minutes, stirring every 2-3 minutes.
After that time, we mix the minced meat with the sauce, and then we do the same with the beans. Add the meat broth, stir and allow the broth to reduce until the desired thickness is achieved. We correct salt. We turn off the fire and let it warm.
We can accompany the chili with white rice. Add some coriander leaves on top of the chili con carne and some lime wedges before serving.
