Learn how to prepare this delicious and traditional Irish dessert: The carrot cake, here is the recipe for this simple but exquisite cake.
Be surprised by its sweet and slightly spicy flavor.

Do you know where this delight came from? The carrot cake originated in Europe and, although it is not a modern invention, it was during World War II that it became famous again. It was in the United Kingdom where, in contrast to the majority of rationed foods, carrots were abundant, hence the use of this vegetable to replace sugar in dessert recipes, and this is how this famous cake emerged.


For the mass

  •  Learn how to prepare this delicious Irish carrot cake4 medium carrots peeled, grated or very small chopped
  • Flour (2 ½ cups or 275 g)
  • Yeast (1 teaspoon)
  • Baking soda (1 teaspoon)
  • Cinnamon powder (1 teaspoon)
  • Sugar (1 cup or 225 g)
  • Brown sugar (1 cup or 200 g)
  • Unsalted butter, at room temperature (250 g)
  • 3 large eggs, at room temperature
  • Vanilla extract (2 teaspoons)
  • Apple or orange juice
  • (½ cup or 118 ml)
  • Liquid cream for desserts (3 teaspoons)

For coverage

  • Mascarpone cheese (one jar, approx. 250 g)
  • Icing sugar (2 tablespoons)
  • Walnuts (a handful)


  1. Preheat the oven to 175ºC. Grease the mold (or both molds) with butter and cover it with greaseproof paper.
  2. In a bowl, mix the flour, yeast, cinnamon and bicarbonate and set aside.
  3. Beat the butter for a few seconds and gradually add the brown sugar and white sugar. Beat for a few minutes, until you get a creamy consistency.
  4. Incorporate the eggs one by one, beating each time. Add the vanilla extract and continue beating.
  5. Pour into the mixture 1/3 (one third) of the mixture of flour and dry ingredients that we had reserved, beat and add half of the juice.
  6. Add another 1/3 (third) of the flour mixture and the other half of the juice to the mixture, and beat.
  7. Add the rest of the flour mixture (1/3) and beat well.
  8. With the help of a spatula, add the carrot and the liquid cream to the mixture and stir by hand.
  9. Pour the dough into the mold (or both molds) and bake for about 60-70 minutes (one mold only) or 30-35 minutes (two molds). The cooking time varies greatly depending on the oven and the thickness of the cake, so it is best to check the baking status
  10. Take out of the oven. Let the cake rest in the mold for 10 minutes, remove it from the mold and let it cool on a rack.

Preparation of coverage:

  • To cover the cake, we will need to let it cool in the fridge (wrapped in plastic wrap) for at least two or three hours.
  • A jar of Mascarpone cheese (usually around 250 g) and two tablespoons of icing sugar (optional: a teaspoon of vanilla extract).
  • We beat it by hand in a bowl until the sugar is integrated with the cheese and we obtain a creamy coating and, with the help of a spatula, we spread it on top of the cake and sprinkle a few walnuts on top.
